Traditional Mormon Funeral Potatoes

cream of chicken soup |

sour cream |

Potatoes need to be boiled and peeled, in either order. Don’t over cook, can be a little undercooked as compared to boiling for mashed potatoes. Grate coarsely, a salad shooter works great and saves a lot of elbow grease.
In a saucepan big enough for all of the ingredients including potatoes, melt butter into chicken soup over medium heat. Gradually add cheddar cheese while stirring with a strong spoon, we’ve broken several. After all of the cheese has been added, stir in sour cream. Remove from heat and fold in the grated potatoes. Spoon the mixture into a casserole or baking dish evenly and smooth with the back of a spoon or spatula. Sprinkle on breadcrumbs or fried onion rings. Bake 350 for 25-35 min.
